Shrimp Monterey gets an epic upgrade with a rich, creamy pesto twist! Tender shrimp are smothered in a velvety sauce that’s both kid-approved and fancy enough for date night. Ready in under 15 min, it’s the perfect, restaurant-worthy, weeknight dinner.


Ingredients
Preparation
  1. Preheat oven to 375° F. 
  2. In a bowl, combine sauce mix and milk. Set aside. 
  3. In Sauté Pan, heat oil over medium heat. Add shrimp and cook 1–2 min or until they just start to turn pink. They will not be fully cooked yet, but this is okay. Remove from pan and set aside. 
  4. In the same pan, stir in reserved seasoning mixture. Reduce heat to medium, stirring occasionally, until sauce thickens, about 2–3 min. 
  5. Add cooked shrimp to pan and stir to combine. Top with cheese. Bake 3–4  min or until cheese melts.
  6. Serve over pasta or rice.
Tips

Use fresh or frozen shrimp (thaw before cooking). Opt for larger shrimp, if you have the option!
